Omelettes and apple crumble!

Hey guys!
This is something I made last night its an omelet and a traditional Danish apple crumble its called "gamle dags æblekage" in Danish.
Lets start out whit the omelet.
Its very simple

2 persons


4 eggs
4 cups of fluor
2 cups of milk
A little salt and pepper

Put the mixture on the pan and remember to make small holes and lift the omelette so all the liquid comes down to the pan, when most of the liquid is gone then take a plate and put it over the omelet and flip the pan then put the omelet down on the pan again on the unfinished side. And after a couple of minutes its done.

Topping: feta, Asparagus.



Apple crumble is also very easy to make.

3 persons

5 medium size appels
Strawberry jam
Raps
Sugar
Cream

First you peel the apples and remove the core then cut them into pieces and put them in a pot with a small drop of water (there is a lot of water in apples) When The apples boils then turn the heat down so it just stands and simmer, the apples are done when it looks like porridge and got no lumps. taste it and if its very sour put in a little sugar. When the apples are finished, it shall be in the refrigerator until completely cold.

Now take the rasp and put it on a hot pan with a little sugar and butter, continue to stir it until it is brown  be careful it does not burn!



then whip the cream into whipped cream :)

When the apples, raps and whipped cream is done take a glass and put jam in the bottom then the apples and raps and last is the Whipped cream and its done.

Thai chili beef and spinach bread!


So today I made two dishes !

Number one is a super easy, super healthy and super yummy dish perfect for lunch or a starter, it can be made in many different ways but here is mine favorite!


Ingredients.

Tortillas waps
Frozen spinach
Parmesan cheese
Tomatoes

And its easy like one two  three!

Put the spinach in the microwave if you don't have one then you just leave it out untill its defrosted. Slice the tomatoes and grate the cheese, then put it in the waps and fold it, put it on a plain pan and slowly heat the wap until its brown and crispy.



Number two course is a main course ! Its Thai chili beef and its real yummy!

Ingredients.

500g ground beef or beef strips
3 cloves of garlic
5 tsp ginger
6 small fresh red chilies (for marinade )
1 tbsp chili paste
1-2 tsp sambal oelek
6 tbsp oil
1 big onion
2-3 tsp sugar
1tbsp fish sauce ( per serving )

Chop the ginger, garlic and put it in the meat with the chili paste, fresh whole chili and sambal oelek. Mix it and put it in the refrigerator for one hour.

When the marinate is done you have to divide the cooking over two servings because the meat need to be fried not boiled. Now take a pan and put in the onion, sugar, and fish sauce in then put in half of the meat untill its done, and Do the same with the rest.

The chili beef can be eaten with rice.

Chili con carne Cajun style !


Hey!
So Today I made chili con carne and while shopping for the last things I found this ! Cajun-mix spices.. so now its chili con carne Cajun style.

Recipe

For 6 portions.

400-500 g Goulash meat ( diced beef )
2 cans of Chopped tomatoes
2 cans of kidney beans
2 Fresh chilies ( 1 if very hot )
2 onions
3 cloves garlic
4 Carrots
4 Bars celery ( don't know what its called, but not a hole celery but 4 of the sticks things ... )
2 red Bell peppers (tre if small)
20 g dark Chocolate
1 and a Half teaspoon coriander
1 and a Half teaspoon Cumin
1 and a Half Tablespoon Cajun-mix ( Not required)
Tabasco after need 

Topping
Skyr ( ore something in that style )

To start whit you chop the onions, chili, garlic, celery, carrots and bell peppers after whatever size you like. Then put the onions, chili and garlic in a pot with a Little Oil and fry it then put in the meat and brown it, while Browning put in the spices and mix it whit the meat. After Browning put in the rest of the Vegetables and mix it for 5 minuts then put the tomatoes in and let it boil for 30 minutes then put 4 dl water and let it boil for 45 minutes. Last you put in the kidney beans, Chocolate and Tabasco and let I boil for another 15 minutes  minimum ! and Flavour it with salt.  the longer it gets the getter its gonna be.  




It's not fast food but it is easy and relatively inexpensive and real yummy ! And there is food for a long time, just put it in the Freezer. :D

Food Is a Girls Best Friend!

Hey my name is Rikke !
I´m from Denmark and live in Copenhagen. My English is not that good but i hope it will work out :-)

Let´s start out with a presentation, this is me ! ------------>
well its not the best picture in the world but its the most precise, 21 year old, silly beer drinking student.

My mission with this blog is to share my own recipes for lots of jummy food from all around the world. Since I am a student I don't have much money BUT that does not mean you have to eat pasta with ketchup and boring white toast. My friends have always told me how good I am to make good and healthy food for no money, so here I am sharing whit you. And if you guys have some ideas or recipes you think I should try please contact me :D

I am not a very religious person but I'm aware that in some religions, pork is not to be eaten. So I decided if I make something with pork I will make a note on what meat that can replace it. There is a few things I will not be able to make, I have a very old gas oven so I will not bake bread ore cake sorry.

Tomorrow ill make a mean chilli con carne, with 85% dark Chocolate, Fresh chili and Tabasco, Its gonna be delicious and i will make a update with the recipe tomorrow night  !
